Since I've Been Back

Because I was in London, there was only eating out to be had. However, since I've been back (Last Wednesday), I've been cooking up a storm! But still eating out a bit I must say...

Last night: Spicy Chicken Thighs-marinated some boneless skinless chicken thighs with lemon zest, lemon juice, salt, minced ginger, garlic, cumin and coriander seed, and one seeded jalepeno. Serve with red beans and rice (this comes in a handy pouch).

All I have to say about this is 1) Why is defrosting so hard for me? Is it my refrigerator? What is it? How long is it defrosting, and when does it turn into just rotting meat? It's a fine balance, friends.

Sunday: Steak, Sweet potato fries and green beans


Montreal steak seasoning is my best friend. Turn pan on high, put some steak seasoning down, plop down fat-trimmed New York strips, leave em for six minutes. Put steak seasoning on the top of the steaks. Turn. Leave em for six minutes. Take em off the heat, rest em, eat em. Sooo good.

I chose some long sweet potatoes (three), cut them in half, sliced them into fry shapes, put them in a bag with some olive oil, paprika, garlic powder and chili powder and shook it up. I don't peel the sweet potatoes, because the skin tastes delicious. Put them in a 400 degree oven, bake them for about 25 minutes. Serve with sour cream on the side.

Frozen green beans, cooked, olive oil, salt, and pepper. Chris said these were the best green beans he's had! I just used olive oil instead of butter...Lesson learned.

Sunday afternoon: Creamy Mac and Cheese
This is the best mac and cheese recipe I have ever made. I added some chopped slices of ham, and we're still enjoying it. I halved this recipe and it is still feeding us!! The cottage cheese gives it a great snap. This isn't as bland as some baked mac and cheese recipes I've made.

Saturday: Went to a party at Trish's house, courtesy of Angela. We had a lot of amazing delicious food. I went home with a big plate of leftovers and feeling quite content.

Friday: Went out for Chinese food at Hollywood East Cafe. The food there is so insanely good it makes my head implode. For example, Pan Fried Triple Delight- minced shrimp stuffed into shells of eggplant, tofu or green pepper, covered with a sauce that must be liquid crack. Sizzling Chicken in casserole-words can't describe the gingery goodness.

Thursday: I don't remember what we ate that day...it's the missing dinner!
