Monday: Chicken Enchilada (made with the leftovers of the roast chicken from Sunday's dinner.
Tuesday: Chicken with Thai Red Curry Sauce from Trader Joe's. It tastes just like Chicken Panang from your favorite Thai place. I add some thawed chopped spinach to give it some oomph.
Wednesday: Chicken Adobo, featuring sprinkles of browned garlic, and one mean marinade.
